Ingredients:
Dough:
- 1 ½ cup De Molen [All Purpose Flour]
- 1 large egg + 1 tablespoon of ice water
- 2 ½ tablespoons of ice water
- ½ teaspoon salt
- 10 tablespoons unsalted butter (cut into small cubes)
Filling:
- 10 Eggs
- 1 cup milk
- ½ cup cooking cream
Other filling ideas:
- ham
- 2 sprigs of leek
- 1 red onion
Preparation:
Filling:
- Mix your eggs, milk, cooking cream, ham, leek and onions in a bowl.
- Set it aside for later.
Dough:
- Mix in a small bowl egg and ice water together.
- Add De Molen flour and salt to a food processor. Pulse briefly until blended.
- Add the diced butter pieces and pulse until the mixture has a coarse texture.
- Add the egg and ice-water mixture. Pulse again until a nice dough forms.
- Place balls of dough in your cupcake or muffin baking tray. Gently press the dough into place with your hands.
- Put the pan with the dough in the freezer for about 20-25 min. For a flaky quiche crust, it is important that the crust is cold when it is filled and cooked.
- Remove your quiche crust from the freezer and fill it with your filling.
- Put it in the oven for 30 min at 190 ºC.
